- Other Information: ‘Temp’ means ‘weather’ and ‘time’ in French, giving ‘Le Temp Fait Tout’ a double meaning: ‘Time does it all/ Weather makes everything.’ And this says everything about Remi Poujol’s non-interventionalist winemaking process. So it’s no surprise he’s one of the most highly regarded natural winemakers of France’s Languedoc region. Poujol’s 5.5 hectares are located in the small village of Adissan. His vines grow organically on hilly terraces made of pebbles, mainly granite and quartz, which contain good amounts of silica. This unique and complex stony soil is great for drainage but because it’s more aerated and less compacted, Poujol must work the land delicately. So Poujol works with his two horses, that also contribute to compost, tirelessly attending his vines. The result is wonderfully true-to-terroir Languedoc varietals: Carignan, Grenache, and Syrah, which Poujol treats with the utmost respect during vinification with as little interference as possible.
This ‘Le Temp Fait Tout’ Rouge is made with a blend of 50% Carignan, 25% Grenache, and 25% Syrah. Aged in vats without any additives or sulphur. And bottled unfiltered and unfined. A beautiful red produced from Poujol’s pure dedication to his vines.
