Varietal: 35% Lambrusco Barghi, 35% Lambrusco Grasparossa with some Marzemino and Uva Termarina (proportions vary with vintage)
Color: Sparkling red
Notes: Spontaneous fermentation with 3 days skin maceration. Aged in tank. Re-fermentation in bottle. No disgorgement, fining or filtration, and no added sulfur. This is bright on the aromatics with spicy berries, lively fruit and a great dry, but not harsh or overly rustic on the finish.
On the farm they have worked organically and biodynamically since day 1 and were certified in 2017. They also work with several important sustainable farming practices including "no till farming", "market gardening" and "permanent bed" agriculture. These are all efforts to minimize soil erosion and compaction to grow truly sustainable foods. Prati al Sole operates a direct to consumer CSA model for all their produce as well as setting up at regional seasonal farmers markets to sell their products.
