- Other Information: Podere Sottoilnoce is a small winery located in the Emilia-Romagna region of Italy, near Modena. And it's named after a large local walnut tree that grows in the oldest vineyard in the region. Podere Sottoilnoce is led by Max Brondolo and Gianluca Bergianti and covers about 6 hectares, grown and cultivated biodynamically. This sparkling pink 'Cattabrega' is made from a blend of 85% Lambrusco Grasparossa, 20% Lambrusco di Sorbara and Trebbiano Modenese. All three varieties are vinified separately. The de-stemmed Grasparossa spends 5 days macerating with the skins with only 2 punchdowns a day to avoid over-extraction. They are gently pressed and added to steel tanks with a pied-de-cuve, made one week before from spontaneous fermentation. Aged in steel until late May when it's assembled with the other wines. Pure grape sugar is added to start second fermentation in bottle. Bottled during the crescent moon. Unfined, unfiltered, with no added sulphites.
