Notes: Alberto and Claudia Carretti make their wines in the Italian hills just outside of Parma using a strict approach to only the most natural if winemaking processes. There is no fining, filtering, no addition of sulfites, no clarification, no stabilization, only native yeasts used, and no other intervention at all. They are natural wines by the strictest definition. Pardarolo wines are typically made in the style of local tradition. 

Pardarolo's 'ex Alba' is a light orange wine made of 100%  hand harvested Trebbiano that has had around 1 1/2 months of extended skin contact in old oak barrels. The wine undergoes spontaneous fermentation with native yeasts before being bottled unfined, unfiltered, and with no addition of sulfur dioxide in the same tradition of their variety of wines making for a complex wine that is also easily enjoyed.
