David took over the Muller-Koeberle estate at the age of 25 with the intention of going completely natural. This was not an easy undertaking and took a lot of discussion with his parents and grandparents to convince them to let him make wine his own way. He and his wife first removed all chemicals from the winemaking. They then turned all of the farming to biodynamic methods. They now focus on producing wines under the Vin Methode Naturale label. The criteria for this designation are: organically grown grapes, manual harvesting, no added yeast or other additives, no filtration or pasteurization, minimal intervention both in the field and the winemaking, among others. David and Marianne are committed to agroforestry maintaining native plants, trees, and animals amongst the vines in understanding of the importance of a true symbiosis amongst all living things.
