Furthermore, be believes that filtering, fining, or any addition to the wine, including small amounts of sulphur, adulterates the whole process. Through biodynamic growing processes and natural vinification, Van Klopper is making some of the most colorful and idiosyncratic wines in Australia, each unique in its vibe and feel—shifting our perceptions and reminding us how raw and rugged and righteous it is when we let Mother Nature speak for herself. This 'Tête d'oeuf' is a 100% Sauvignon Blanc wine, handpicked from 25-year-old vines in Totness, grown on black sandy soil in overlying petrified schist. The fruit is destemmed and left to soak, fermenting on berries for 2 weeks, encouraging the perfumed notes of the wine. It’s then pressed and aged in 680L ceramic eggs, creating a slightly cloudy wine with a dark, rich golden color. Deep on the nose with cape gooseberry and elderflower with an exciting salty palate. Voluptuous with hints of a tropical garden. A vibrant Sauvignon Blanc to share with friends.
