• Other Information: East Germany native, Axel Prufer, moved to the Languedoc region of France in the late 90s to join the natural wine movement. And today he’s one of the leading natural wine producers of the region. Prufer’s vineyards grow in the high altitudes and rich soils of the Black Mountains of L’'Hérault. And he tends them with the upmost care and respect, with biodynamic methods. Prufer’s non-interventionist approach is also reflected in his cellar, where he vinifies with indigenous yeasts and no added sulphur. This ‘Fou du Roi’ translates to ‘The Jester’ and it’s a playful blend of hand harvested Cinsault, Grenache, and Carignan. Made using carbonic maceration, unfiltered and unfined.
