Notes: Rosé Bistrotage is a Champagne vinified by Charles Dufour made with 100% Pinot Noir grapes that come from the vineyards of the Vallée de L'Arc (Cote de Bar), in this line called 'Bistrotage' the grapes all derive from land belonging to the mother of Dufour, Francoise Martinot.
The plants rest on clay-calcareous soils, and are cultivated in a natural way without the addition of chemical substances. In fact the company, after a first traditionalist approach, in 2000 was converted into organic when Charles Dufour, taking the reins, started work based on innovative ideas of producing pure Champagne in full respect for the terroir.
Fermentation takes place in wooden vats and re-fermentation in the bottle as required by the Champenoise method. This Champagne is a very elegant rosé Champagne, with a bright pinkish color tending to orange, a predominantly fruity aromatic profile (given by Pinot Noir) with citrus and minerality. The sip is fresh and dynamic, but very soft. A fine example of Rosé de Saignée, elegant and pleasant to drink.
