Françoise Martinot 'Bistrotage B.13' Champagne Extra Brut
Producer: Françoise Martinot
Varietal: 75% Pinot Noir, 25% Chardonnay
Color: Sparkling yellow
Notes: Bistrotage is a Champagne vinified by Charles Dufour, in this line called 'Bistrotage' the grapes all derive from land belonging to the mother of Dufour, Françoise Martinot.
Pure Pinot Noir grapes are obtained from vines from the Cote de Bar that rest on limestone-clay soils. The harvest dates back to 2010, the fermentation of the base wines takes place in large French oak barrels, as well as the aging. Subsequently, no filtration or clarification is carried out and no dosage, even the use of sulfur dioxide is prohibited. This is a complex and lively sparkling wine, with a bright straw yellow color and a persistent and fine perlage. The nose has a mainly fruity profile, together with aromas of yeast and bread crust, and mineral notes. In the mouth it is soft and creamy, recalls the fruit of the nose with a good persistence.
