Notes: This 100% Chenin Blanc wine is produced by François Saint-Lô in the caves of Loire, which are ideal for vinifying wine because of the natural temperature control and humidity. The grapes from this vintage were picked from vines around 30 years old. A third of the harvest was whole bunch macerated for about 2 weeks, while the rest was directly pressed. Juices were kept separate and put together a few weeks before bottling. Unfiltered, unfined, with no added sulphites.
After learning with Olivier Cousin and Eric Dubois, François bought his own place near Saumur and started to make unconventional and very natural wines in huge cathedral-like troglodyte cellars. These caves are ideal for vinifying because of the natural temperature control and humidity. François works the vineyards with horses. In the cellar he uses old barrels, fibreglass tanks and the hundred year-old press that was there when he bought the place.
