Manuel Moraga is a 7th generation winemaker. His ancestor was a conquistador who actually got along with the townspeople who nicknamed him Cacique Maravilla or wonderful leader. Manuel can trace his ancestry back to 1776, which is when the original Pais vines were planted. Today’s Pais grapes come from vines that are over 250 years old. Preferring to let the vines grow naturally, minimal intervention takes place in the farming practices. There are no tractors and the land is fairly wild with an abundance of diverse growth and vegetation. Manuel rarely even prunes his vines. Everything is kept as natural as possible.
‘Pipeno’ is 100% Pais grown organically in the aptly named Bio-Bio river valley in Chile. The wine ferments outside in open-topped containers. It is bottled just before the completion of fermentation giving it a natural slight fizz, a definitive characteristic of ‘Pipeno’. This is an old school example of a traditional Chilean farmer’s wine.
