- Other Information: Led by brothers Noel and Jair Tellez and their mother Ana Montano, Bichi produces some of the most magical natural wine in Mexico. The Tellez family farm is located in Tecate, among the rugged mountains of Mexico's Baja California Norte. Winemaking in this region dates all the way back to the conquistadors. And the Tellez family are making energetic and fresh new wines from historic recently recovered vineyards there. 'Bichi' means 'naked' in parts of Northern Mexico, an apt name for these expressive wines. This 'Pet Mex' is made from a mysterious grape variety that remains unidentified from a single, dry-farmed, 69-year-old vineyard. The grapes are hand-harvested, de-stemmed, and pressed after a few hours on the skins. Fermentation is with wild yeasts, and the wine is bottled before fermentation is finished, where the wine went through secondary fermentation, a la metodo ancestral.
