- Other Information: Led by brothers Noel and Jair Tellez and their mother Ana Montano, Bichi produces some of the most magical natural wine in Mexico. The Tellez family farm is located in Tecate, among the rugged mountains of Mexico's Baja California Norte. Winemaking in this region dates all the way back to the conquistadors. And the Tellez family are making energetic and fresh new wines from very old recently recovered vineyards there. 'Bichi' means 'naked' in parts of Northern Mexico, an apt name for these expressive wines. This 'La Santa' is made with 100% hand harvested Moscatel Negro grapes. De-stemmed and fermented without temperature control in 450 liter concrete tinajas with 45 days of maceration. The wine was then raised for 3 months in half stainless steel vats and half older barrels. Bottled unfiltered and unfined.
