Due to the elevated heat of the region most of the winemaking occurs outdoors utilizing only indigenous yeasts. These wines are unfined, unfiltered, and truly express the spirit of La Mancha.

This wine has had 4 months skin contact and spent two months in amphorae. 'Pampaneo Toledo' is unfined, unfiltered, and has no added sulfites.
