• Other Information: Led by brothers Noel and Jair Tellez and their mother Ana Montano, Bichi produces some of the most magical natural wine in Mexico. The Tellez family farm is located in Tecate, among the rugged mountains of Mexico's Baja California Norte. Winemaking in this region dates all the way back to the conquistadors. And the Tellez family are making energetic and fresh new wines from historic recently recovered vineyards there. 'Bichi' means 'naked' in parts of Northern Mexico, an apt name for these expressive wines. This 'Listan' is made with 100% hand harvested Listán Prieto grapes. De-stemmed and fermented without temperature control in 450 liter concrete tinajas. After fermentation, half of the cuvee goes to stainless steel vats, and the other goes to half to used barrels for 3 months. The wine is bottled without fining or filtering.
