Clairin Casimir Rhum
Clairin is a white distillate made from fermented sugar cane juice from the Highlands of Haiti. Clairin Rums are from indigenous cane varieties, non-hybridized, with no chemistry in agriculture. Spontaneous fermentation with no yeast selected, archaic distillation, and no filtration.
This particular Clairin is produced in Harraderes, a small village located right by the Caribbean Sea. It is made by a historic variety of sugarcane called Hawaii, which grows exclusively in this area preserved from any pollution, in the middle of mango trees and banana groves. The spontaneous fermentation takes place in open tanks and this exceptional rum is distilled in a homemade pot still heated by open flames.
